San Pedro’s Fish Ingredients:

1 Kg Fish of San Pedro

500 g Potatoes

4 Chives

1 Clove Garlic

3 Tomatoes

200 g of Swiss chard

2 cs of Raisins

2 cs of Roasted Pine Nuts

6 cs of Olive Oil

1 Chapatti to Accompany

Sea ​​Salt (By Taste)

Pepper (By Taste)

Preparation:

Ask the fishmonger to remove the central spine and head to the fish and fillet it in 6 pieces. Preheat oven to 180 °. Wash the beets, dry them and chop them. Peel the potatoes and cut them into thick slices. Wash the tomatoes, cut 2 slices and chop the other. Peel and chop the chives. Peel the garlic and cut it into sheets.

Season the fish fillets. Heat 2 cs of oil in a frying pan and mark the fillets on both sides reserve. Add the rest of the oil to the same pan and fry the potatoes on both sides.

Drain and place in the bottom of a baking dish. In the same pan, sauté 4 min the garlic and the chives. Add the chard, chopped tomatoes, pine nuts and raisins, season with salt and freshly ground pepper and cook 2 more minutes.

Arrange the marked fish fillets on the potatoes, cover with the fried vegetables, spread over the tomato slices and put the oven at 180º between 8 and 10 min.

Divide the fish with the vegetables in the dishes, decorate with a few sheets of fried garlic and accompany with a few Pieces of Crusty Bread.
